Where most of you have already plotted out your Thanksgiving meals far in advance, there might still be one question that comes to mind in the haze of over-carb consumption - What am I going to do with all these leftovers!?

Fret not friends! We've got you covered this year with two easy ideas that will have you hesitate sending home guests with the goods - Just so you can make some of these Thanksgiving Leftover Pop Tarts of your own!

Thanksgiving Leftover Pop Tarts - Makes 6 hand pies

 3 frozen pie crusts - let defrost for 1-2 hours before making
Any Thanksgiving leftovers you can find in your fridge
Orange for zesting
1 egg + 1 tsp water egg wash

Apple Cranberry Pot Pies (With Candied Sage & Herb Orange Frosting)
Suggested leftovers: apple and cranberry sauce with additional orange zest
 
Masala Turkey 'Pot Pie" (With Bourbon Orange Glaze)
Suggested leftovers: turkey, gravy, yams or mashed potatoes and  hearty greens such as roasted brussels sprouts.  To create masala filling add  1 tsp ground masala spices to 1/2 cup gravy & leftover shredded turkey into a skillet and stir over medium heat for 5-10 minutes.

Directions

  • Pre-heat oven to 350
  • Cut 12 5'x3' rectangles from your pie crusts and assemble 6 of them on a baking sheet lined with parchment paper
  • Fill pie rectangles with 3-4 TBS of filling, leaving at least 1 - 1 1/2 inch boarders  and add fresh orange zest
  • Mix 1 egg with 1 tsp water and brush egg wash along the edges of pastry rectangles
  • Place top 6 pastry rectangles on top of mixture, pressing firmly on edges, and brushing additional egg white to seal packet closed
  • Prick 4 holes in center of pop tart and bake for 30 minutes, until golden

Bourbon Orange Glaze

3 TBS honey
3 drops orange bitters
1 TBS whiskey or bourbon
1-2 tsp fresh orange zest
Mix well and brush onto savory pop tart after baking

 

Candied Sage & Herb Orange Frosting

1 tsp finely chopped fresh sage
1 tsp fresh orange zest
3 TBS powdered sugar
2 tsp water
Depending on desired frosting consistency, add water gradually until thickness is achieved
Mix well and brush onto sweet pop tart after baking
 
For candied sage - coat fresh leaves in an egg white bath and dip both sides into sugar
Place on a cooling rack to dry for 2-3 hours
