It's the start of a new year and the desire to keep things  healthy and simple is still pretty fresh in most of our minds as we try to form (and undoubtedly break) our new list of 2015 habits.  We've partnered with the  "Silk Helps You Bloom" campaign which is all about making easy choices and substitutions that are simple while helping us be the best we can be adding a little extra calcium and vitamin E into our diets. And what better way to do that with a super glam dessert that is so unbelievably effortless to make!?  We thing this just might just knock your own socks off without missing any of the dairy (aka: zero guilt indulgence).

Lately we've been a little obsessed with black sesame and matcha desserts (can someone stop me from buying out this mochi shop please?!).  So when Silk asked us to figure out an easy way to incorporate Almondmilk into a new year's routine, we immediately thought about these Japanese desserts.

Then again, we are always thinking about dessert in some form or another.

Alone, matcha & black sesame flavors can be a bit intense, but can also be easily tamed with delicious results...not to mention stunning color. We decided to challenge ourselves by elevating the humble pudding dessert AND going dairy free by swapping out heavy cream and 2% milk with Silk Almondmilk.
Almondmilk is the perfect pairing for these unique flavors, adding a surprising richness and smooth creaminess to the pudding with just the perfect amount of sweetness...not to mention a few additional perks: like only 60 calories per serving and 50% more calcium than dairy milk.
I think they call that a "win win". I think that also means you can eat more than two. We won't judge.

Dairy-Free Black Sesame Pudding

3 TBS Black Sesame Paste
5 tsp crushed black sesame seeds
½ cup granulated sugar
4 tsp agar agar (or 2 packet of Gelatin)
2 ½ cup Silk Almondmilk
1 Cup Coconut milk

  • Bring sugar, sesame paste, seeds and  Almond Milk to a boil, stiring until all contents dissolve
  • Once at a boil, add agar agar mixture and stir until dissolved
  • Add Coconut milk, stir and remove from heat. Let mixture  sit for 10-15 minutes until cool
  • Pour into mold, (we used spherical ice cube trays) refrigerate overnight.
  • Serve with a dusting of matcha green tea powder
 
*For a creamy more traditional pudding texture, use only half of the suggested amount of agar agar or gelatin and place pudding mixture in a small mason jar or bowl.

Since pudding's texture can typically be a little lack luster, we topped our treats with a sprinkle of crushed black sesame seeds and a dusting of matcha powder to give them a little extra oomph in the mouth...and for the eyes.

Because let's be real, it's all about the presentation.


Dairy-Free Green Tea Matcha Pudding

1 ¼ cup Silk Almond Milk
⅓ cup coconut milk
4 TBS Matcha Powder
3 tsp agar agar (or 1 ½ packet of Gelatin)

  • Bring to a boil, turn off add agar agar, and stir until dissolved.
  • Set aside to cool for 10-15 minutes. Pour into mold, (we used spherical ice cube trays) refrigerate overnight.
  • Serve with a sprinkle of black sesame seed dust

We used these gem ice cube trays for a little extra glamour and visual wow....because who doesn't want to be eating a pile of sophisticatedly flavored jewels?!
